Three easy ways to turn leftover takeout into a full meal for your family!

1. Chinese Chicken and Broccoli

 I do this sometimes if I have a little leftover of chicken and broccoli along with a bag of Steamers Asian Medley. Cook the steamers Asian medley in the bag for 5 minutes in the microwave while you set the stove to medium-high heat with a tbsp of sesame oil and 1 clove of chopped garlic. Wait until the garlic is sauteed and then add in the chicken and broccoli along with the Asian medley. Add some light soy sauce and stir. Allow the stir fry to simmer for a few minutes and enjoy! If you need a bit more add in some of the leftover white or fried rice! 

2. Italian Greek/Side Salad 

Sometimes I will order a salad from the pizza parlor while my friends and I are also ordering pizza just for another meal the next day. Grill a chicken breast or two and season it the way you like. I like to keep it simple and just use salt, pepper, and fresh lemon juice. While that cooks I like to add spinach to the already existing salad. Usually however much lettuce already exists in the salad I add that much of spinach plus some (nothing wrong with a little extra iron)! Slice up the chicken, throw in some fresh grape tomatoes and add some garlic bread to the side and you’ve got yourself a meal! 

3. Chinese Fried Rice 

I’m sure we have all been in that situation where we order Chinese take out and are given a quart of white rice that we just end up throwing out! Instead of the normal white rice that comes with the food I always make sure to ask for fried rice instead, which is still measly compared to the regular fried rice HOWEVER, it’s very easy to jazz up. Heat up about 1 tablespoon of sesame oil in a wok or large skillet. Chop up either half or a whole white onion (depending on how much you need) and a package of peas and carrots frozen. Cook until the vegetables turn a light brown color, not too dark else it will taste bitter. Pour another tablespoon of sesame oil into the wok and crack two eggs into it as well, swirling immediately with a spoon (I prefer to use large chopsticks). Add any type of uncooked sliced chicken, pork, or beef to the wok and cook until meat is done. Add the fried rice along with some butter and 2 tbsp of light soy sauce. Enjoy!

Easy & Delicious BBQ Chicken + meal you can prepare with the leftovers (Easy BBQ Pizza)!

The Ingredients: 

2 large chicken breasts (or more depending on how many people you are cooking for, this amount made enough for 3 people with a little leftover)

1 bottle Sweet Baby Ray’s BBQ sauce

2 tbsp white vinegar

Optional:

Fresh sliced bread

Brown Sugar & Crushed Red Pepper to taste, PLEASE be careful when doing this. If you enjoy more sweet BBQ then add about 1tbsp of brown sugar, but NO more, you don’t want overly sweet BBQ. If you enjoy more spicy BBQ then add crushed red pepper but no more than half a tbsp. If you taste it once it’s cooked and decide it needs more spice then you can add more. Just remember you can always add more but you can never take it away. If you like both (like I do) then simply add a few shakes of crushed red pepper and half a tbsp of brown sugar.

Directions: 

Slice the chicken breast horizontally as shown below. This helps the chicken cook faster, cook more evenly, and helps it shred easier when in the crock pot.

Place the chicken in the crock pot on high, along with the entire bottle of Sweet Baby Ray’s BBQ sauce, vinegar, and your optional crushed red pepper and brown sugar. Allow the chicken to cook for 5 hours on high heat. Take a fork and a knife and shred the chicken apart inside the crock pot. Serve on a freshly sliced bun and enjoy!

Ingredients: 

Any type of flour tortilla, I used whole wheat pocket pita’s

Shredded mozzarella or any type of shredded cheese you have available

Optional: 

I added a little bit of chopped onion on mine as well

Directions:

Preheat over to 400 degrees. Take a baking sheet and place the pita on it. Top the pita with the leftover BBQ chicken and chopped onions. Sprinkle your desired amount of cheese on top of the chicken. Heat in the oven for 15 minutes or until the cheese has melted.

Side Note: 

This BBQ chicken is a full proof recipe and your husband/boyfriend will love that you prepared some savory BBQ. I like to pair the BBQ with mashed potatoes and usually some type of vegetable such as corn or coleslaw. On top of that the BBQ pizza that I decided to make with the little bit of leftovers was absolutely delicious! Equally as delicious as the original meal. I don’t know about you guys but I get tired of eating the same type of food as leftovers and like to try to make something different with it and this pizza was an absolute slam dunk!

The Easiest Crock Pot Chicken Tacos You Will EVER Make

Ingredients:

1 medium jar salsa (any type you prefer; I use pace) 

1 packet taco seasoning 

3-4 chicken breasts (2.5-3lbs) 

Optional Toppings:

1 chopped onion 

1 chopped tomato 

Sour Cream

Lettuce 

1 bag of Mexican shredded cheese 

Flour tortillas, corn tortillas, or taco shells 

Directions: 

Turn the crock pot on high and allow it to warm up as you prepare the chicken. Wash and then slice the chicken breasts vertically, this will allow the meat to pull apart more easily in the crock pot. Place the chicken, salsa, and taco seasoning in the crock pot. Check on it occasionally to shred the chicken with a fork. Allow the chicken to cook for 5-6 hours, the longer the better. Prepare the taco toppings however you like. 

Side Note: 

I prefer using small flour tortillas for chicken taco’s. For a little spice you can add some hot sauce to the crock pot (your choice) or even a can of diced jalapeno’s as a potential topping. This recipe is extremely simply and amazingly delicious. It is one of my favorite crock pot recipes because it’s impossible to screw up. I’m sorry I don’t have photos of this recipe but I made it a week before I started this blog.
